3 Bacon Strips, diced (optional)
1 sm. Onion, chopped
1 clove Gar­lic, minced
3 tbsp. All-Purpose Flour
1 tsp. Salt
1 tsp. Dried Basil
1/2 tsp. Pepper
3 c. Chicken Broth (or veg­etable broth)
2 Baked Pota­toes, peeled and cubed
1 c. Half & Half Cream
Ched­dar cheese, shredded- for topping

Directions:
Directions:
In a large saucepan, cook bacon until crisp. Drain the grease, reserving 1 tbsp. drip­pings.

Saute onion and gar­lic in the drip­pings until ten­der over low to medium heat, until translucent. Stir in flour, salt, basil and pep­per; mix well. Once you have those together, grad­u­ally add broth. Bring to boil; boil and stir for 2 minutes.

Add in potatoes.Then add cream. If you want a creamier soup, lightly mash (with a potato masher) keep­ing large chunks of pota­toes. Once it’s all warmed together gar­nish with bacon & cheese.
