4 c. Flour
1 tsp. Salt
1 ½ c. Sugar
1 tsp. Baking Powder
3/4 c. Shortening
2 Eggs, slightly beaten
1 tsp. Vanilla
1 tsp. Baking Soda
¾ c. Buttermilk

Directions:
Directions:
Sift flour, salt, sugar and baking powder in a large bowl. Cut in shortening like pie crust, until it is crumbly like cornmeal.

In a small bowl combine eggs, vanilla, baking soda and buttermilk. Add the wet ingredients to the dry, and mix with a fork until you can't mix it anymore. You can work this with your fingers if needed.

Roll out on breadboard to ¼” thick, and cut with cookie cutters. Bake at 400° for seven minutes (no longer).

This cookie is still white when cooked and very soft. This recipe dates back more than 100 years.
