1 lb. Monterey Jack Cheese
1 lb. Cheddar Cheese
2/3 c. Evaporated Milk
4 Eggs
2- 4oz. cans Green Chilies
1 tbsp. Flour
½ tsp. Salt
1/8 tsp. Pepper
2 Tomatoes, sliced
Directions:
Directions:
Mix cheese and green chilies in a 2 qt. casserole pan. Separate eggs, and beat whites until stiff. Mix yolks, milk, flour, salt and pepper. Fold yolk mixture into whites and pour over cheese, letting the eggs run into the cheese. Bake for 30 minutes at 325°. Add tomatoes to the top and bake for 30 minutes more.
