1/4 c. Crumbled Basil & Tomato Feta Cheese
2 tbsp. Cream Cheese
4 skinless, boneless Chicken Breasts
1/2 tsp. Black Pepper
dash of Salt
1 tsp. Olive Oil
1/4 c. Chicken Broth
1 tbsp. Lemon Juice
10 oz. pack spinach – trimmed and fresh

Directions:
Directions:
Combine feta and cream cheese.

Cut horizontal slit in chicken making pocket, and stuff with cheese mixture. Sprinkle with pepper and salt.

In large skillet cook chicken in hot oil over med-high heat (~12 minutes, turning once). Remove chicken – cover and keep warm. Add chicken broth to skillet, and bring to a boil. Add spinach – cover and cook ~3 mins. Stir in lemon juice.

Serve chicken over bed of spinach
