6-8 chicken breast halves, boneless, no skin
1/2 c. Flour
1 1/2 tsp. Salt
1/4 tsp. Pepper
1/2 tsp. Paprika
3 tbsp. Butter
2 tbsp. Olive Oil
1/4 c. Chicken Broth/Water
3 tbsp. Lemon Juice
3 tbsp. Capers
6-8 thin slices of Lemon

Put chicken in plastic bag (freezer size works best) and pound using meat tenderizer until approx. ¼”.

In pie dish combine flour, salt, pepper, and paprika. Dredge chicken breasts in the mixture to coat well.

Heat butter and olive oil in a large skillet. Sauté chicken breasts in batches (~3 mins on each side) – put cooked batches aside on oven safe dish/pan and place in oven on broil to keep warm.

Drain all but 2 tbsp. fat from skillet. Stir in chicken broth – scrapping to loosen browned bits. Add lemon juice and heat through. Return chicken to the skillet with the lemon slices.

Heat until sauce thickens. Add capers.

Serve alone or over couscous/rice
