3 tbsp. Vegetable Oil
3 Chicken Breasts, cut into thin strips
Salt and Pepper
2" piece of Ginger, grated
4 lg. Garlic Cloves, chopped
½ tsp. Crushed Red Pepper Flakes (use less if you don’t like heat)
6 Scallions, cut into 2" lengths, then cut lengthwise into matchsticks
3 tbsp. Honey
¼ c. Tamari (dark soy sauce)

Heat a large non-stick skillet over high heat. Once oil has heated up add chicken, season with S&P. Stir-Fry for a few minutes, then add the ginger, garlic, red pepper and cook 2 more minutes. Add the scallions and stir-fry another minute. Add tamari and honey to form a sauce and glaze the chicken. Remove the pan from heat. Serve or rice.
