2 ½ - 3 lb. Pork Roast
½ tsp. Salt
½ tsp. Pepper
1 tbsp. Cooking Oil
2 med. Onions, cut into thin wedges
4 c. Rootbeer
2 tbsp. Garlic, minced
1 c. Bottled Chili Sauce
¼ tsp. Root Beer Concentrate- optional
Several dashes Hot Pepper Sauce- optional
Hamburger Buns
Tomato- optional
Lettuce- optional
Mayonnaise- optional

Directions:
Directions:
Trim fat from roast, sprinkle with salt and pepper. Brown roast in hot oil; drain.

Transfer to Crockpot, add onion, 1 cup root beer and garlic. Cover, cook on low 8-10 hours or high 4-5 hours.

Meanwhile make sauce. In saucepan add 3 cups root beer and bottled chili sauce; bring to boil. Reduce heat, boil gently, uncovered stirring occasionally about 30 minutes or until sauce is reduced to 2 cups. Add concentrate and hot sauce, if desired.

Transfer roast to cutting board and remove onions (do not use juice from crockpot).

Shred roast with 2 forks, add meat to sauce. Can be served on bun with lettuce, mayo and tomato.
