3 Hard-Boiled Eggs
1 ½ c. Milk
3 tbsp. Butter
6 slices of Toast
3 tbsp. Flour
¾ tsp. Salt
dash of Pepper

Directions:
Directions:
In a saucepan, melt the butter over low heat. Add flour, and stir constantly for 2 minutes. Add milk and seasoning. Stir until thickened.

Chop the egg whites and add them to the white sauce.

Pour sauce over toast.

Mash egg yolk with a fork until they are in small pieces. Pile lightly over each piece of toast as a topping.

Serve while hot.

I always served this for supper with a vegetable. I found some people have it for breakfast, or brunch. The recipe was originally from my school cooking class. My kids all loved it.
