3 lbs. Round Steak (same as Cube Steak)
1 Onion, chopped
4 Tomatoes
2 Green Bell Peppers
2 Celery Stalks
2 c. White Rice, cooked
2 tbsp. Cornstarch
3-4 c. Water

Directions:
Directions:
Cut steaks into strips. Brown using a small amount of cooking oil. Add onion and simmer for 30 minutes.

Make a gravy using the cornstarch mixed with water. Pour the gravy over the meat and onions. Season with salt and pepper, to your state. Stir and cook until thickened.

Cook rice, wedge tomatoes, dice celery and cut the peppers into strips. Add the vegetables to the meat and gravy. Cook just long enough to heat the vegetables.

Spread rice on a large platter, and cover with the pepper steak mixture. The peppers and celery should still be crisp.

This is really good with tomatoes right out of the garden. I try to make this in the fall when vegetables are the best. My kids liked it, but usually picked the green peppers out.
