¾ c. Sugar
½ c. Shortening
1 c. Mashed Potatoes
2 tsp. Salt
3 Eggs, beaten
2 c. Milk, scalded
8 c. Flour
¾ c. Water, warm
1 tsp. Mace
2 pkgs. of yeast (or 2 Tbsp.)

Directions:
Directions:
Dissolve yeast in water, and set aside. Combine milk, sugar and shortening in a saucepan until creamy. Add potatoes and salt. Combine mixture with yeast. Add eggs and mace, and mix well. Add flour, two cups at a time. Knead for several minutes and let rise until double in size. Punch dough and let rise again. Roll dough into balls or doughnuts (yes, this dough will rise three times).

Bake at 400° for 12-15 minutes.

If making doughnuts, drop into hot oil until light brown on both sides. Drain on paper towels.

This recipe I got from a friend, Carol Wiggins, from my club with girls from school. We recently had our picture in the newspaper with a story about us. We have been meeting for about 50 years. It began as a once a week get together, but now we meet once a month.
