2 ½ c. Water
½ pkg. Raisins
2 tsp. Baking Soda
½ c. Shortening
2 c. Sugar
2 Eggs
3 c. Flour
½ tsp. Salt
½ tsp. Cinnamon
½ tsp. Cloves
½ tsp. Allspice
2 tsp. Baking Powder
Chopped Walnuts, if desired

Directions:
Directions:
Boil water and raisins for 10 minutes. Let Cool. Add baking soda to the water and raisins after the 10 minutes.

Cream together the shortening, sugar and eggs. Add the raisin mixture to the egg mixture. Then add the flour, salt, cinnamon, allspice, baking powder and walnuts (if using).

Pour into a greased 10x13 baking dish and bake at 350° for 35 minutes, or until cake is done.

This is a recipe handed down from my Grandma Mary Burnett. At Christmas time we add cut up gum drops and chopped candied cherries. We then make it in loaf pans. I made this the year before Ron was to be born, and I think I ate two cakes by myself, in small pieces. Maybe that’s part of the reason he was 10 lbs. at birth?! I still love to make this at the Christmas season, and at any other time.
