1 lb. Baby Brussel Sprouts
3 T. Duck Fat
1 T. Butter

Sauce:
1/4 c. Mayonnaise
3 garlic cloves minced
1/2 t. lemon juice
1/2 t. ketchup

Directions:
Directions:
Blanch brussel sprouts in salted boiling water for 5-7 minutes. Drain.

Mean while, melt duck fat and butter in medium-high skillet. Add brussel sprouts stem side down. Lightly salt and pepper. Fry approximately 4-5 minutes or until lightly brown. Turn to side and continue turning until all sides are brown and crispy.

Sauce: Mix mayo, garlic, lemon juice and ketchup.

* Duck fat can purchased online or in-store at William Sonoma. You will love it.
