Grammy's Peanut Butter Fudge Recipe

2c Granulated Sugar
2/3c Evaporated Milk
1c Smooth Peanut Butter
9oz Marshmellow "Fluff"
1tsp Vanilla Extract
3/4c Chopped Walnuts
pinch Salt

Turn on stove top burner to medium heat.

Mix sugar and evaporated milk in a heavy 3 quart pot until sugar is dissolved. Put pot with sugar mixture in it on stove top over medium heat. Stir until sugar mixture starts to bubble.

Start the testing process. Here's how it works: Drop about a teaspoon of the bubbling sugar mixture into a small glass of cool water, and see if the mixture forms a small ball at the bottom of the glass. Do this several times since the mixture will cloud the water at first. Each time, get a fresh glass of water and drop a dollop of the bubbling mixture into it. As soon as the mixture forms a small ball in the glass, remove the pot from the burner.

Fold the peanut butter into the sugar mixture as it sits off the stove. Use whisk or spatula to incorporate the peanut butter. Add vanilla extract and continue to stir.

Fold the marshmellow into the mixture. Stir vigorously to incorporate the marshmellow and the peanut butter until the entire mixture is smooth and silky looking. Add walnuts and stir until evenly distributed.

Pour mixture into a flat dish, approximately 7 x 10 x 2".

Allow fudge to cool by sitting at room temparature for 2 hours.

When cooled, cut fudge into 1" cubes. Refrigerate or freeze.
