1 beaten egg
3 over-ripe bananas, mashed
1 c. Wheat Chex cereal
1/4 c. melted butter
1 1/2 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped walnuts

Preheat oven to 350 degrees.

Combine egg, bananas, Wheat Chex and butter. Mix well, using electric mixer to thoroughly mash bananas and cereal. Combine flour, sugar, baking powder, soda and salt. Stir in nuts and add to first mixture, stirring only enough to moisten flour. Place in greased and floured bread pan (8 1/2" x 4 1/2" x 3"). Bake about 50 minutes or until lightly browned and toothpick comes out clean when inserted in center.

Yield: 1 loaf
