3 cloves garlic
large handful parsley
2 big scallions, 1 inch pieces
3 cups cooked chickpeas (2 15-oz cans, rinsed and drained)
6 Tbsp tahini
6 Tbsp fresh lemon juice
1 tsp salt (to taste)
pinch cayenne and cumin(optional)

Directions:
Directions:
Place garlic, parsley, and scallions in a food processor and mince. Add chickpeas, tahini, lemon juice, and salt. Puree to a thick paste. Season to taste with cayenne and cumin. Chill in tightly lidded container. Serve with pita chips.
