1 Turkey Carcass, the bigger the better
1 pkg carrots
a bunch of celery
6 garlic cloves
2 onions
s/p
1 leek
turkey from carcass
grandmas noodles
chicken stock (4 cubes
water

Directions:
Directions:
Put carcass in large stock pot and cover with water. Add 4 carrots, 2 celery stalks one chopped onion and a leek. Let simmer for 3-4 hours. Add water if necessary. Drain through sieve into another stock pot. Let carcass cool. Pick out the good pieces of turkey and put with the strained Turkey stock. Toss the rest of the stuff that didn't strain. Once all turkey is in, chop 5-10 chopped carrots, 4 chopped celery stalks and an chopped onion. For the soup, I chop carrots in half and put into the soup. Also add the bouillon. Let simmer for an hour or 2. Add salt and pepper to taste. Twenty minutes before serving add Grandma's noodle. You can find these in the freer section of the grocery store. Enjoy!

BETTER THAN BOUILLON is a great brand of chicken stock. Pricey but at Costco it is worth it!. Sometimes I add chopped tomatoes or leftover green beans from Thanksgiving! We serve this over mashed potatoes!
