2 three pound broiler fryers, quartered
3/4 cups flour
1 tsp salt
freshly ground pepper
1/2 cup salad oil
1 cup canned tomatoes
1 1/2 cups dry white Bordeaux wine
1 cup sliced mushrooms, cooked in a little butter until wilted
1 clove garlic, finely chopped and cooked briefly in a little butter

Directions:

Dredge chicken in one half cup of the flour, seasoned with the salt and pepper.

In a heavy skillet heat the oil, add the chicken and brown on all sides. Cover the pan and cook slowly twenty five minutes. Pour the oil from the skillet and add the tomatoes with their juice. Bring to a boil.

Combine the remaining flour with a little water and stir into the simmering tomatoes. Cook, stirring, until the mixture thickens.

Add the wine, mushrooms and garlic, cover and cook until the chicken is tender, about 20 minutes longer. Serve hot.
