8 med. potatoes
6 eggs
2 celery stalks (maybe 3)
1 sm. onion
2 c. Miracle Whip (approx)
2 Tbsp. mustard
1/2 tsp. horseradish
salt & pepper

Directions:
Directions:
Put eggs in pan, cover with cold water, bring to a rolling boil, remove from heat and cover and let sit for 25 min. Drain off hot water, fill pan with cold water and ice and let sit until eggs are cool. Peel and dice. microwave potatoes. Let cool until you can handle them. Then peel and dice. Dice celery & onion and set aside. Mix Miracle Whip, mustard and horseradish in large bowl; (I sometimes add small amount of pickle juice as well) add celery, onion, eggs and potatoes. Stir everything together with some salt and pepper to tast. Add more Miracle Whip if necessary. Sprinkle with paprika. Chill for several hours.
