1 2/3 cup all-purpose flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup butter, softened
3/4 cup brown sugar, firmly packed
1/3 cup sugar
1 tsp. vanilla extract
1 egg
1 1/2 tsp. lime zest
1 T. lime juice
14 oz. good quality white chocolate, coarsely chopped or a 12-14 oz. bag white chocolate chips
1 cup flaked coconut
3/4 cup macadamia nuts, coarsely chopped

Directions:

Preheat oven to 375º F.

In a small bowl, mix the flour, baking powder, salt and baking soda.

In a large bowl, beat the butter, sugars and vanilla extract at high speed until well combined.

Add the egg, lime juice and lime zest and beat for 1 additional minute.

Gradually add in the flour mixture.

Stir in the nuts, coconut and white chocolate chips by hand.

Drop the dough by rounded T. onto ungreased cookie sheet. Bake for 8-10 minutes.
