1 1/2 cups Mazola oil
3 cups grated carrots
2 cups sugar
3 cups all purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
4 whole eggs - beaten
1/2 cup chopped nuts, raisins, or dates (if desired)

Directions:

Combine all ingredients and bake in a greased and floured Angel Food Pan

Bake 1/ 1/4 hours
350 degree oven
