2.2 lb peeled fresh plum tomato (blanch to make peel easier)
3 oz. chopped onion
3 cloves garlic, chopped
1 bay leaf
1 tbsp sugar
5 oz butter
1 bunch basil
salt and pepper

Directions:
Directions:
Sweat onions with olive oil and bay leaf. Add peeled plum tomatoes. Bring to boil. Reduce flame and let simmer for 20 minutes. Add sugar and cook for 15 minutes. Adjust taste with salt and pepper. Remove from heat.

Melt butter in pan. Add chopped basil and garlic. Butter will foam. Add foamy butter to tomato sauce.

Pass sauce through blender.

Adjust taste.
