4 beef shanks
6-8 Celery Stalks, sliced
4-6 Carrots, slices
2-4 Red skinned potatoes, cut into chunks, leave skin on
2 tomatoes, cut up
Tomato soup 1 can
Beef Bouillon, 2 cubes
Barley 1/2 cup to 3/4 cup (Mother's quick cook barley)
Onion, 1 large
Salt/pepper to taste

Directions:
1. Place beef shanks in large soup pot, cover with water and add a little more
2. Bring to boil, simmer for 1-2 hours, skimming foam off, lid slightly ajar
3. Add tomato soup and vegetables, barley, bouillon and s/p
4. Simmer 1.5 to 2 hours.
5. Once done, take beef out, and remove from bones and cut up, place back in soup
6.Make noodles (follow package directions). I use egg free.
