2 egg whit ( cold )
1 cup powder sugar
3/4 cup Almond flour.
2 1/2 tabs regular sugar
Food coloring to give it the color. or make one color

The filling
1 8 oz filly cheese
1 jar 12 oz jam of raspberry or strawberry.
mix together until soft .

large bowl sift the sugar and almond flour and sit a side
In the mixer beat the egg white on low speed for 3 min then add the sugar to it slowly on medium speed for moor 3 minute add 2 drop food coloring ,know mix on high speed for 2 min to look fluffy and stiff .
Use a rubber spatula, gently fold the almond to the egg mix and give it around 50 soft stroke to smooth the mix.
Place a wax cooking paper on a cookie sheet. Use pastry piping to create a drop size of quarter and make a 2 inch space between them slam the try gently on a flat surfs to release air bubbles, and let to rest for 30 to 40 minutes. Preheat oven on 325º and bake for 15 to 18 minute.
Cool the macaroon then stuff it with filling.
