Ingredients: 2- 8 oz. packages of ORIGINAL Philadelphia Cream Cheese ( not low fat ). 1- 8oz. Extra sharp cheddar cheese cold pack ( Wisp Pride or Kakuna Club ) 1 - onion Vidalia works best 1- Large green olive or 1 sprig of parsley 2- cups of pecans 1 box of Wheatworth crackers or crackers of your choice

Directions:1. Put the 2 cream cheeses and the extra sharp cheddar cheese cold pack into a large mixing bowl.Let cheeses to come to room temperature. 2. Chop the onion very fine. Use a "little oscar" if you have one, or use a grater to grate onion. 3. Add 4 or 5 heaping Tbsp. of onion into the bowl. Please note the key to this recipe is the amount of onion you use. 4. Stir the contents in the bowl together until the cheeses become a uniform light orange color. For best results, mix with a wooden spoon. If you are in a hurry you can microwave the cheese just enough to soften for stirring. 5. Using a flat spatula form a ball in the bowl. cover the top of the bowl with foil or saran wrap and refrigerate overnight. 6. Chop the pecans medium fine in a "little oscar " or nut grinder. 7. In the morning take the ball out of the bowl and form it with your hands to the desired round shape that you want. Immediately roll the cheeseball in the pecans until completely covered. 8. Put a green olive in the middle of the top of the cheeseball or put a parsley sprig on the top.wrap in saran wrap and then in foil. refrigerate until ready to serve. 9. Serve with the Wheatworth crackers or crackers of your choice. |
