French Onion Soup Recipe

3 lbs. onions
1/2 c. butter
7 c. beef broth
1 c. water
12 thin slices French bread, dried
8-10 oz. finely shredded Gruyere cheese (or any cheese)

Melt butter in big pot. Peel and cut the onions in half. Cut the heels off the onions and slice them crosswise. Add onions to the butter and cook over medium heat until they are golden brown-about 45 minutes-1 hour. Add beef broth and water to onions and bring to boil. Reduce heat and simmer uncovered for 15 minutes. While soup simmers, preheat oven to 400. When almost ready to serve put 2 dry pieces of toast per person on cookie sheet. Spread grated Gruyere cheese evenly on each piece and melt in oven until cheese is beginning to brown. Fill bowls with soup and top with cheese croutons/toast.
