5 oz diced pork (or chicken)
1 tsp soy sauce
1 tsp cooking sherry
dash of sugar
salt/pepper
3/4 cup red or green peppers
3/4 cup celery
3/4 cup onion
3/4 cup parboiled carrots

Sauce
2-3 Tbsp oil
2 tsp cornstarch
1 tsp sugar
2 tsp soy sauce
1/4 cup of water
(Double sauce mixture if using more meat)
1 cup roasted cashews

Directions:

Marinade: In a bag put 5 oz. diced pork (or chicken), 1 tsp. soy sauce, 1 tsp. cooking sherry, dash of sugar, salt and pepper to taste.
Dice 3/4 cup each: Red or green pepper, celery, onion, and parboiled carrots.

Heat 2-3 Tbsp. oil. Add meat until cooked, then add vegetables. Cover and stir from time to time (about 5 min).

Mix: 2 tsp. cornstarch, 1 tsp. sugar, 2 tsp. soy sauce, and 1/4 cup water.
Add to meat and vegetable mixture. (Double sauce mixture if using more meat.)
Add 1 cup roasted cashews.
