1 1/2 lbs lean ground beef
1 onion, chopped
1-28 oz can tomatoes
2 cups water
1 can tomato soup
3 cans consomme soup (or 2 beef bouillon cubes plus 2 cups hot water)
4 carrots chopped
3 stalks celery, chopped
8 tbsp pearl barley
1/2 tsp thyme
1 bay leaf
salt and pepper to taste

Directions:
Directions:
Brown meat and onions. Drain well. Combine all ingredients in a large pot. Cook at least 2 hours OR use crock pot and coop up to 8 hours. Serves 10-12. Freezes well.

Variations: Add 1 cup cooked macaroni after vegetables are cooked (instead of barley).
Add shredded cheddar cheese to each bowl
