1/2 to 1lb of fresh smelt
breadcrumbs
1 egg
1/4 cup milk
3 tablespoons oil

Directions:
Directions:
mix egg and milk together and stir
place breadcrumbs on a plate
rinse the smelts
place smelt in egg and milk wash
than place smelt in the breadcrumbs and cover
In a frying pan heat the oil over medium heat
place the breaded smelt into the hot oil
cook the smelt for 10 minutes or until brown

Growing up Catholic, we could not eat meat on Fridays. Pop Pop wasn't Catholic but he would follow the rules. When we could afford fish, Nana would make the smelts for Pop and we would have cod or haddock.
