Ingredients: 2 lb curd cheese or fresh mozzarella (Sliced thin )
2 cup of yellow farina small grains
2 cup water
1 cup sugar
2 tsp rosewater or orange blossom
1 lb mascarpone
1 lb ricotta cheese for the stuffing

On the stove using a large pan on medium heat .Add water and sugar.use a wooden spoon and stir for the sugar to dissolve, lower the heat, add the farina and mix it until blend and no lumps from the farina (add little water if needed).
Add the cheese to it and blend it again,
let the cheese melt slowly by mixing and stretching to combine it together until you see no more pieces of cheese not melted until smooth and incorporated together. Mix the 2 cheeses together and fill it to the piping bag.
Use a flat serfs to spread some syrup . Brush the rolling pin with some syrup.
Then place the cheese dough pres it and spread on the flat serfs with the rolling-pin to open it like a pie.
Prepare a serving plat,
then begin from one end add the filling using a pipe bag and make a line to the other end and Roll it ones to have a long pip of cheese .
Cut with the knife into 2 inch bit size.
In a serving dish place the rolls and sprinkle the chopped pistachio for decoration .
