1 cup of white rice
2 cups of chicken broth
1/4 to 1/2 cup of chopped fresh cilantro
1 onion chopped
1 jalapeņo peppper




Directions:
Directions:
Saute onion and pepper in a little oil until half way cooked. Add the rice and saute a little - do not let it get too brown. Add the cilantro when rice has cooked a little and then add the chicken broth and cover. It should simmer for about 30 minutes or until the rice is tender. You may need to add water as needed.
