4 boneless chicken breast halves
1/2 cup flour
1-3/4 tsp. salt
1/2 tsp. black pepper
3 Tbsp. oil
6 Tbsp. butter
1/4 cup lemon juice
1/2 cup chicken broth
1 garlic clove minced
2 Tbsp drained capers
1 Tbsp chopped parsley

Pound chicken until 1/8 " thick. In bowl combine flour, salt and pepper. Coat each breast with flour mixture and shake off extra. Place oil in skillet over medium heat. When oil is hot, not smoking, add butte. Fry each breast about 1 minute each side. When all are cooked through remove and cover. Add lemon juice to skillet, scrape bottom. When juice is reduced by half, add chicken broth, garlic and capers. Cook 5 minutes till slightly thickened. Add parsley. Cook 1 minute - don't let it boil. Pour over chicken and serve immediately.
