1 cup butter
1 cup granulated sugar
1 tsp. baking soda
2 eggs
1 6-oz. can (3/4 cup) frozen lemonade concentrate, thawed
3 cups all-purpose flour

Preheat oven to 400º. In a medium mixing bowl beat butter with an electric mixer on medium speed for 30 seconds. Add the 1 cup granulated sugar and the baking soda. Beat until combined. Beat in eggs and 1/2 cup of the lemonade concentrate. Beat in as much of the flour as you can. Stir in any remaining flour with a wooden spoon.

Drop dough by rounded teaspoons 2 inches apart on ungreased baking sheets. Bake for 6 to 7 minutes or until lightly brown around the edges. Cool on baking sheet for 1 minute. Transfer cookies to a wire rack. Brush hot cookies lightly with remaining lemonade concentrate; sprinkle with sugar. Let cool.
