"Yankee" Chicken Recipe

2 cups of all purpose flour
2 teaspoons of paprika
2 teaspoons Kosher salt
Freshly ground pepper
1 (3 to 4 pound) whole chicken, cut into serving pieces, or equivalent pieces

Directions:
Directions:
Melt 2 to 21/2 cups vegetable oil in an electric skillet or cast iron skillet until medium high temperature is reached. Meanwhile, whisk together the flour with the seasonings. Rinse the chicken pieces, sprinkle with more salt and dredge in the flour; When oil temperature is reached, carefully lower each piece of chicken into hot oil, fitting pieces in as well as possible, but try not to crowd if possible. DO NOT COVER. Let chicken fry until it smells like fried chicken, or until golden brown on the first side. Do not move it around. Just let it fry. When brown on the first side, turn each piece over and turn stove down to medium low. Cover pan and let fry until second side is brown, about 30 minutes. Uncover and turn the chicken over one more time to crisp up the first side again but do not cover the pan again. When crisp, remove and drain on paper towels. You can keep it crisp in the oven on a rack with paper towels under the rack to catch drippings. Serve hot.

As I told you in Picnic Chicken, this is what my southern Grandpa Lackey called "Yankee" chicken. So I named it just that.
