2 lbs boneless chicken breasts, skinned and cut into cubes
1 clove garlic, minced
1 tsp white pepper
3 tbsp butter or margarine
1 lg onion, roughly chopped
3 sticks celery, roughly chopped
1 lg green pepper, seeded and chopped
2 tbsp tomato paste
1 tsp cayenne
1 tsp black pepper
14 oz. canned Rotel tomatoes
6 oz. smoked sausage, cut into 1/2- in, dice
3 cups chicken bouillon
2 tbsp Tabasco
Salt to taste

Directions:
Melt the butter or margarine in large saucepan; add the onion. Cook slowly to brown and then add celery, green pepper and garlic and cook briefly. Add the 3 kinds of pepper and the rice and mix well. Add the chicken, tomatoes, tomato paste, sausage, bouillon, Tabasco and salt and mix well. Bring to a boil, then reduce the heat to simmering and cook about 20 to 25 minutes stirring occasionally until chicken is done and the rice is tender. The rice should have absorbed most of the liquid by the time it is cooked.
