3 Lb Chicken Broiler Fryer (Cut Up)
1/4 c Shortening (Crisco)
1/2 c Flour
2 c Thinly Sliced Onion
1/2 c Chopped Pepper
2 Cloves Garlic Crushed
1 8 oz Can of Tomato Sauce
1 16 oz Can of Tomatoes (Drained)
1 Can 3 oz Mushrooms (Drained)
1/4 tsp Oregano

Directions:
Directions:
Wash and pat dry chicken. In large skillet melt shortening over medium heat. Coat chicken with flour. Cook chicken in hot shortening over medium heat 15-20 minutes or until brown. Remove chicken and set aside.
Add onion rings and green pepper and garlic to skillet and cook and stir over medium heat until onion and pepper are tender. Then stir in remaining ingredients. Add chicken, cover and simmer 30-40 minutes until chicken is tender.

Serve over mashed potatoes
