3 Med zucchini
3/4 cup shredded sharp cheddar
1 tablespoon dried parsley
1/4 tsp. salt
dash pepper
1 egg, well beaten

Directions:
wash zucchini well. Cut off the ends, cook zucchini hole in boiling salted water to cover 10 or 12 minutes until barely tender, but still firm. Meanwhile combine 1/2 cup cheese, parsley, salt, pepper, and egg. mix well when squash is just tender, drain, and cut them in half lengthwise, scoop out center pulp leaving a shell of outer pulp and skin. Invert shells to drain. cut center pulp into chunks and toss lightly with cheese mixture. place drained zucchini shells right side up in a greased baking dish. Pile cheese mixture into shells and sprinkle with remaining cheese. Bake at 350º for 15 minutes then run under broiler a few minutes to brown cheese
