1 bundle long rice soak in warm water till soft
1 pound chicken
1 cup water
1 cup canned chicken broth
1" piece of fresh ginger (crushed)
1 tsp. salt
1 clove garlic (crushed)
1 cube chicken bouillon

Directions:
Directions:
Cover chicken with water and broth. Add ginger, salt, garlic and chicken bouillon. Boil and simmer 45 minutes or until tender. Then add the soaked long rice. Reheat, mix and serve.

Personal Notes:
Long rice can be found in most Asain sections of the grocery store. Long rice is actually a noodle made with mung bean flour. This noodle is gluten-free for people with allergies to gluten.
