Ingredients:

1 cup Panko
1 teaspoon dill weed
½ teaspoon paprika
½ teaspoon salt
1 egg beaten
¾ cup of flour

Directions:
You will need three bowls. Put flour in one, egg in the second, and the other 4 ingredients in the third. I usually use salmon or halibut but any fish you like you can use. Pat filets dry. Dip first into flour, then into the egg wash, and then roll in the Panko mixture. Make sure you have about a ½ inch of cooking oil in your frying pan and that it is hot. Fry your fish. The worse mistake you can make is to over cook it.

I also do chicken fingers for my grandchildren with this batter. They love it!
