1/2 lb. Ditilini pasta (1 c dry)
1 - 29oz can tomato sauce
3-4 c chicken broth
2 -16oz cans of Northern Beans - not drained
1/2 c diced carrots
1 small onion diced
1 T olive oil
sprig of fresh rosemary
1 bay leave
2 cloves of garlic
1/2 can tomato paste
1 chunk of cheese rind

Directions:
Directions:
In Dutch oven or heavy soup pot heat olive oil & saute' carrots until tender. Add onion & garlic until onions are translucent. Add sauce, broth, cheese rind, rosemary, bay leaf & beans. Bring to slow boil, add pasta. Simmer for 10 minutes (stirring frequently) & then turn down very low. When ready to serve, remove bay leaf, rosemary stick & rind.
Serve warm topped with spaghetti cheese & some warm crusty bread or garlic bread.
The pasta will continue to soak up the juices so you can always add more broth &/or tomato sauce as needed.
