1 large head of cabbage
1 lb of ground chuck
1/4 cup rice (uncooked)
1 egg
4 large onions (cut into small pieces and sautéed until brown)
1 large carrot (grated)
Kosher salt

Sauce
1/3 cup lemon juice, white or cider vinegar
2/3 cup brown sugar
3 (8 ounce) cans tomato sauce

Directions:
Directions:
Core head of cabbage and place whole in a large pot with boiling water nearly to cover. Cover and simmer gently for 5 minutes. Drain and remove leaves.
Combine meat, rice and egg. Add grated or sautéed onions, grated carrot, and salt. Place a small ball of meat mixture in the center of each cabbage leaf and roll up, tucking the ends in securely after the first roll. Place close together in a large pot, stacking them if necessary
Combine sauce ingredients and add with enough water to cover. Cover and cook over moderate heat for 30 minutes. Reduce heat and simmer for 45 minutes.
If so desired you may brown the cabbage rolls in 350 degree oven for the last 15 minutes of cooking time. Serve with rice or mashed potatoes.
