3 tbsp of butter
3 tbsp flour
2 cups of warm milk (microwave 30 seconds per cup)
2 chopped boiled eggs
3/4 cup frozen peas
1 can strained tuna (in water)
toasted bread/w butter
salt/pepper to taste

Medium Size Pot
Begin by making the Roux (sauce) butter flour and milk
Melt the butter, whisk in the flour and keep whisking until smooth/no lumps
Add warm milk and keep whisking on low until all is bubbly and flour cooks off
Add Salt/Pepper
Add the tuna
Add the peas
Add the chopped cooked eggs (big chunks)
Simmer on low until peas are tender
Serve over toast with butter
