blintzes (fresh or frozen)
4 large eggs
1/4 cup sugar
1 large sour cream
1/4 lb melted butter
1 tbsp vanilla
1/2 cup orange juice
2 tbsp grated finely- orange rind.
sprinkle of cinnamon- and brown sugar

Directions:
Directions:
Grease baking dish. Line bottom with fresh or frozen blintzes. In a bowl mix eggs, sugar and sour cream. Add melted butter, orange juice, and vanilla. Mix then pour over blintzes. Add sprinkle of cinnamon and brown sugar. Bake at 350º for an hour.

This recipe is great for brunch and one of our family favorites. Serve with sausage, bacon, apple sauce as a condiment, fresh fruit, bagels/cream cheese with lox, etc. It's a lovely side dish.
