1 lb sweet Italian sausage, casings removed
1 large onion, chopped
4 cloves garlic, minced
2 t basil
1 t crushed red pepper flakes
1 can (28 oz) crushed tomatoes in puree
1 can (15 oz) crushed tomatoes in puree
1 can (6 oz) tomato paste
1/2 t salt
1 lb ziti or penne pasta
1 container (15 oz) ricotta cheese
1 c Parmesan
2 eggs
1 c shredded mozzarella cheese

In large pot over med-high heat, cook sausage, breaking up with spoon until almost cooked through, 3-5 mins. With slotted spoon, remove sausage and set aside. To fat in pot add onion; cook until soft, about 3 mins. Stir in garlic, basil & pepper flakes; cook 2 mins. Stir in tomatoes, tomato paste and salt. Bring to a simmer. Reduce heat, cover and simmer 15 mins. Meanwhile, cook pasta per package instructions; drain and set aside.

Preheat oven to 350º. Lightly coat 13 X 9 inch baking dish with cooking spray. Set aside 3 cups sauce. In large bowl, combine ricotta, Parmesan and eggs. Stir in pasta, sausage and remaining sauce. Pour mixture into baking dish; spread reserved sauce over. Cover with foil and bake 40 mins. Remove from oven; remove foil. Position oven rack 4" from heat source; switch to broiler setting. Sprinkle casserole with mozzarella. Broil until cheese is melted and bubbly, about 2 mins.
