2 pork tenderloins, about 1 lb. each
Salt/pepper
1 small clove garlic, minced
4 T grainy Dijon mustard, or country-style
2 T honey
2 T brown sugar
1 T cider vinegar or balsamic vinegar
1/2 t dried leaf thyme, crumbled
1 T cornstarch
1 T cold water

Directions:
Directions:
1. Wash & trim pork; pat dry. Sprinkle lightly with salt/pepper. Place pork in slow cooker.

2. Combine garlic, mustard, honey, brown sugar, vinegar, & thyme. Pour over pork & coat thoroughly.

3. Cover crockpot & cook LOW (7 to 9 hrs.) or HIGH (3-1/2 to 4-1/2 hrs.).

4. Remove pork, cover with foil, keep warm.

5. Pour juices in a saucepan & bring to a boil. Simmer 8-10 min. until liquid reduces by 1/3.

6. In a small cup, combine cornstarch & cold water.

7. Whisk/drizzle cornstarch into reduced juices. Stir for 1 min.

8. Serve pork sliced with thickened juices.
