REFRIGERATOR ROLLS Emma Harris

DISSOLVE: 2 Pkg (2 Tbs.) dry yeast, 1 Tsp. sugar in 1 Cup lukewarm water-set aside

2 Cups scalded milk
4 Tsp. salt
2/3 Cup shortening
2 beaten eggs
¾ Cup sugar
About 8 1/4 cups flour

Directions:
POUR scalded milk over sugar, salt and shortening, in mixer. Cool slightly.
ADD: beaten eggs and one-half flour. MIX WELL
ADD: yeast and remaining flour to make a soft (not sticky-not dry) dough.
KNEAD for 10 min if no mixer. Place in greased container, cover.
Refrigerate up to one week. When ready to use:
FORM: into 1/2 in. balls (3) or 1 in. balls (2) per greased muffin tin. Let rise double.
BAKE: 425o about 10 minutes until golden brown. Makes 3 doz.
