1 (approx. 6 lb) pork roast*
1/3 c cider vinegar
1/4 c soy sauce
5 cloves garlic, chopped
1/4 c Worcestershire sauce
1 t pepper
1/2 t Lawry's
1/4 c lemon juice

*You may use any kind of pork roast from a butt to a loin. Obviously the leaner cuts have less fat but the lesser cuts are often cheaper & tastier. You'll have to experiment to find out what you like best.

Trim pork of excess fat, if necessary. Place in the middle of a large sheet of heavy duty foil. Put in a deep roasting pan. Mix remaining ingredients and pour over roast. Wrap tightly, leaving a 1 inch gap at the top between the meat and the foil. Bake at 225º overnight or for 8-10 hours.

Leaving roast in pan, chill well so that fat coagulates and is easy to remove. Shred meat and put back in pan with the juices. (I use a clean pan, baking dish or crock pot to reheat the meat and its juices).

Great served on buns with cole slaw!
