1 tablespoon extra virgin olive oil
1 small onion
1 clove garlic, minced
4 to 6 cups chicken stock or vegetable broth
1- 14 oz. coarsely chopped tomatoes
1 small package frozen cheese tortellini (pre-cooked or quick-cook)
2 to 4 cups fresh spinach, roughly chopped
1/4 cup freshly grated Parmesan
Course salt and cracked black pepper

In large soup pot, heat olive oil over medium heat. Sauté onion and garlic until translucent (5-7 minutes). Add broth and tomatoes, turn to high heat and bring to boil. Add tortellini and cook according to package directions. When tortellini is almost cooked, add spinach, salt, and pepper.

Serve in large mugs and garnish with the freshly grated Parmesan.
