4-6 tilapia filets
cooking spray
12 oz baby spinach, cleaned (or more if you'd like)
1/4 c chicken broth
1/4 t onion powder
S & P
Creole seasoning blend
1 small tomato, chopped
4 green onions, thinly sliced

Directions:
Directions:
Spray a 9 X 13 inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit into the dish steam or sauté for a minute or two to wilt slightly.

Sprinkle spinach with S & P & onion powder; add chicken broth. Sprinkle tilapia lightly with S & P & Creole seasoning to taste. Arrange the filets over the spinach & sprinkle with tomato and green onions. Cover and bake at 350º for 20-25 minutes until fish flakes easily with a fork.
