1/2 cup confectioners sugar
2 cups plus 6 T flour divided
pinch of salt
l cup room temperature butter cut into 8 pieces
4 eggs
2 cups sugar
6 T fresh lemon juice
grated rind of one lemon

Directions:
Directions:
Preheat oven to 350
Lightly grease a l3 x 9 inch baking pan

In a food procesor blend confectiones sugar, 2 cups flour and salt. Add butter and pulse until mixture is crumbly. Press into a pan and bake for 20 minutes.

Meanwhile, beat eggs, 2 cups sugar, 6 T flour and lemon juice until well combined. Stir in lemon rind. Pour on top of hot crust and bake for an additonal 20 -25 minutes, but watch closely so that it does not overbake or burn. Cool and dust with confectioner's sugar.
