2 cans chicken stock
1 can Rotel (undrained)
1 can black beans (rinsed)
1 can corn (drained) or 1-1/2 cup of fresh or frozen sweet corn
2 cups shredded, cooked chicken
1 medium onion, chopped
1 bell pepper, chopped
1 jalapeno, chopped and seeded
3 T. fresh, chopped garlic
1/4 lb. Velveeta
1 tsp. chili powder
1 tsp. cumin
salt and pepper to taste

Top with:
Tortilla strips or chips
Cheddar Cheese
Guacamole
Sour Cream
Salsa

Directions:
Add onion, bell pepper, garlic, and jalapeno to soup pot. Cook 2-3 minutes. Add stock, chili powder, and cumin. Bring to boil. Add Velveeta. Reduce heat to simmer and stir until Velveeta is melted. Add chicken, corn, black beans, and Rotel. Stir gently and continue to simmer 10-15 minutes. Garnish with your choice of toppings.
